  1. Prepare of Cake.
  2. You need 2 cup of Flour.
  3. Prepare 2 cup of Sugar.
  4. It's 1 tsp of Baking soda.
  5. It's 2 tsp of Cinnamon.
  6. It's 1/2 tsp of Salt.
  7. Prepare 4 of Eggs beaten.
  8. Prepare 3 cup of Grated carrots.
  9. Prepare 1 1/2 cup of Oil.
  10. You need of Icing.
  11. You need 8 oz of Cream cheese.
  12. Prepare 1 stick of Butter.
  13. Prepare 1 lb of Powdered sugar.
  14. It's 1 cup of Chopped walnuts or pecans (optional).

  4. Pour beaten eggs over dry ingredients, do not stir..
  5. Add oil and beat until combined then add carrots and best until throughly distributed..
  6. Pour batter into a greased 9 x 13 pan and bake for 40 - 45 minutes..
  7. Beat cream cheese and butter together until blended then slowly add powdered sugar until all sugar is added and icing is smooth. Add desired amount of nuts..
  8. Ice the cake about 10 - 15 minutes after baking to allow icing to melt and set properly..
  9. Allow cake to cool and serve..
